Does anyone know the fibre and protein counts for this recipe? I'm trying to make sure I get enough of both so I'm counting them just as I count carbs. This info would really help.

I just made Gabi's bread and it turned out quite well, but a little bit salty. However, I've only had a sliver from the end at this point, so that may not be a fair test.

I ran the recipe through MasterCook (but reduced salt to 1/2 teaspoon only). This is the nutrition info I get, with 16 slices as she suggested. I don't know that I'll GET 16 slices, but one can hope. By the way, the crust is quite dark and very chewy. The loaf also must have puffed up and settled back, cos on top, there is obviously an air pocket just under one area of the crust. However, from what I can see where I sliced it, the texture looks very good. I just used the "Basic" cycle on my bread machine.

Per Serving (excluding unknown items): 87 Calories; 5g Fat (43.3% calories from fat); 8g Protein; 5g Carbohydrate; 1g Dietary Fiber ; 0mg Cholesterol; 114mg Sodium. Exchanges: 0 Grain(Starch); 0 Lean Meat; 1/2 Fat; 0 Other Carbohydrates.

After doing some reaearch on the net, for Gabi's famous bread as listed on your posted link,

Total Net Carbs=60.5g
Total Protein=130.5g

GABI'S BREAD - ORIGINAL WITH VARIATIONS

Cut into 16 slices once cooled.

2 tsp dry yeast
1 tsp sugar -- yeast food
1 1/8 cups warm water
2 tbsp olive oil
1 tsp salt
1 tbsp splenda
3/4 cup gluten, wheat -- flour
1/4 cup oat bran -- flour
1/4 cup flax seeds -- meal
1/4 cup wheat bran
1 cup soy flour

In the bottom of your bread machine pan, mix the yeast, water and sugar - this is a yeast starter, and it also lets you know if your yeast is alive. That way, if your yeast is not alive (it's not bubbling) you can make another batch before you add the rest of the ingredients and you won't lose the whole bread.
Mix the rest of the dry ingredients together in a separate bowl. Add the olive oil to the yeast/water/sugar mixture in the machine. Add the dry ingredients. Set the machine to the Basic cycle (4 hour cycle on most machines) and let 'er rip.

Check your own machines instructions for Gluten flour. You can also remove the paddles after about 40 minutes then resume . the dough is then not overworked.

Variations:
Reduce flax seed to 1/8 cup and add 1/8 cup of almond meal.

Caraway Seed: Add 1 1/2 tsp baking powder, 2 tbsp caraway seed

Rosemary: Add 1 1/2 tsp baking powder, 2 tbspcrushed Rosemary Leaves

It's about 4 carbs per 1/2 inch slice. It is dense but it taste a hell of a lot better than that atkins bread. I made it from a recipe... it didn't rise, and it taste like a sponge cake.

I made this Gabi's bread without a machine and it seems to have turned out fine.
