I tried Wa'il's new bread recipe today. It was truly wonderful...I'm not sure how he manufacturered the recipe. Mine didn't rise like his did, not sure why....but it still had a wonderful flavour. I liked Gabi's, but I like this a whole lot better. I would say we are truly lingering online with a "World Famous Wa'il". When word of this bread recipe gets out he's going to be very popular. I am going to try my next loaf in my breadmachine. I have no idea how it will work, but I'm going to try it.
By the way, sometimes, I'm unclear about where I should post a topic...it's about food....but not really a food idea...etc..etc..

Hi Sharon,
Got any suggestions then?? Um, someone mentioned that it was confusing having a "Recipe" forum, and a "Recipe" page on the website. Food Ideas was just a suggestion, but anything better is most welcome.;)

Hi Doreen...no I like the food ideas...and when they become "official" ideas to make them recipes :) The breakdown on the forum has been well organized.

Thanks Sharon, glad you liked the flavour! The most common cause for problems with the rise, is the type of yeast used. Must be fresh, dry active yeast. A good way to find if yours is good, is how thick and foamy it becomes. Buy a few different brands, and try them, which ever gives you a thick foamy liquid, use it with the dry ingredients.
re: Where to post? Anywhere that you feel like it, it's not a big deal, and we can move threads when someone says so. I feel like moving the "herbal laxetive" thread to the humor forum, it just cracks me up! :)

Hi good people,
I've posted this in Low-Carb Canada & Atkins A-WayofLife but seeing as how the recipes originated here, perhaps someone can clear up my confusion: :)
I'm planning to do some baking and I have two great recipes (guess which one of them is: :))that I want to try but I am confused about some of the ingredients, can anyone help me understand what they are? I'll check at the Bulk Barn (perhaps I already have one or more of them bought under another name?
The ingredients are:
Whey protein powder
Vital wheat gluten
Almond meal (I know almond flour or crushed almonds but this ....?)
Wheat bran
Soy protein isolate
ciao,
Norma June (Barrie, ON Canada)

W'ail,
I don't have a bread machine and Betty Crocker I'm not! After trying to impress my DH (then my fiancee)with my baking ability he made me sign a pre-nup agreeing that I would NOT ever again attempt to bake. :) So could you explain how I do the following manually when attempting to make Shepherd's Loaf?:
Put the sugar and water into the bottom of your bread machine pan, stir together.
Add the oil.
Pour the dry ingredients into the pan, load in the pan and run on the Dough cycle.
Once kneaded and risen (@ 1.5 hours max)
Much appreciated,
Norma June

Hi Norma June....It's around 10:30 and I have a new loaf in my bread machine right now...in a couple hours I'll be able to tell you my results. It looks nice a fluffy so far. I wasn't sure whether we'd need the egg and cream doing it in the breadmaker, but I used all the ingredients.
I put all the liquid ingredients in the bottom of the machine..I beat the egg and cream together and put them with the water...then all the dry ingredients...then last the yeast and small amount of sugar the recipe calls for.

HI Wa'il...I bought new yeast yesterday...made a special trip for it, as all I had was machine yeast..so I definitely will try another brand, if the machine trick doesn't work!!!

Hi Norma,
You must have mistaken another recipe for mine :) I have no bread machine, and my recipe is done in the traditional oven baking method.
As for ingredients. Whey protein, and soy protein isolate, can be found at sports nutrition stores or health stores. Wheat Gluten is any wheat gluten you can find (bulk barn has it) as long as it has 70% or more protein. Whole wheat bran can be found at any supermarket, usually in the cereal isle. Almond meal, is just ground almond or almond flour.

I set my machine of the Basic Bread Recipe...mine takes 3:50 hours for this cycle. During the first mix and rise it rose almost to the top of the lid (which is really nice), then fell during the later part of the cycle. I'm thinking about trying the short cycle next time as then it will only rise once. I would have assumed having grains in it that it would have needed the long cycle, but not sure. It still tastes as great as the oven method though. I would say my results in the breadmachine were better than the oven. Everyones oven and breadmachines are a little different and it just takes a couple of loaves to find out what works best with yours. I wouldn't hesitate to make it again in the oven, but the breadmaker definitely is easier.
If anyone else trys the Shepherd's Bread in a machine let me know what cycle worked best for you.
I'm sure most people have this little trick, but I always cut my homemade bread with an electric knife. Makes nice thin, sharp slices...even slicing warm.
Wa'il, I hope you have no objections to us perfecting YOUR recipes for our breadmakers!!

Please do, and send me any improvements that can be added to the recipe.

See if this works: http://www.lowcarb.ca/recipes/bread104.html
I had to do a Google search to find it, but it came right up under "Shepherd's Loaf".
I'm going to try it!

I actually need to buy a new bread machine. Mine died after years and years of making high-carb pizza dough.
See what carbs can do to things?
