I keep reading about this French Toast recipe that everyone seems to love. I'm desperite for something different for breakfast on induction and really wanna try it since they're going on about it so much...BUT the pork rind thing....what are we to do in UK?

Do we dash out and buy pork scratchings? Is that the same thing? I know I could probably order on line, but by them time they arrive, Induction will be over for me anyway! :rolleyes:

Any ideas anyone?....Please! :roll:

pork scratchings is the same thing.i,ve never tried that recipe.i,ll have to look it up.

It sounds such a strange recipe cos it's all sweet stuff but with pork rinds!

But I haven't heard one bad thing said against it yet so I have to give it a go!

I also thought that Pork rinds and pork scratchings were the same until I was told otherwise. You might find the following discussion of interest (http://forum.lowcarber.org/showthread.php?t=54341&highlight=pork+rinds) .

I've not tried the recipe you mention. Watch out for dextrose in any pork rind/scratchings you buy as this is a form of sugar.

Look our for pork crackles or pork crunch - they're much more puffy and work better in the recipe.

The French toast isn't just for Induction you know! :D

Thanks Ann and Lisa. I nearly dashed out and bought any sort of pork scratchings today but didn't have time. Glad I didn't now. I didn't realise pork scratchings could be so complicated! lol

Thanks for the help. I take it, Lisa, you love the french toast too?!

The recipe I have from the Atkins book says nothing about pork rind, so I'm not sure how the recipe you're using incorporates it.

In the Atkins cookbook, they give an alternative to pork rind if you're using it as "breading", made by grinding together 1/4 cup ground sesame seeds, 1/2 tsp pepper and 1/4 cup soy flour.

Alternatively, pork rind is very simple to make for yourself... it's only the crispy skin of a roast pork after all!
