Hi, I am also looking for a good fudge recipe for my husband. It doesn't matter if it has peanut butter or not, as long as it is fudge! :agree:

Hi Guys-
I saw this post and thought that sounded really good so I got on the All Recipes.com website to see if I could find something to be modified to fit Low carbing and I think I did!!!!
Only instead of the milk maybe you could use heavy whipping and cream and water to make it like milk and use Splenda instead of sugar-Otherwise everything is low carb friendly!!
2 (1 ounce) squares unsweetened baking chocolate
1 tablespoon butter
1 cup milk
2 cups white sugar
1 pinch salt
1 teaspoon vanilla extract
Directions
1 Butter a 9x9 inch dish.
2 In a medium saucepan over medium heat, combine chocolate, butter and milk. Bring to a boil and let boil 1 minute. Stir in sugar and salt until dissolved. Heat, stirring constantly, to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat and stir in vanilla. Let cool 10 minutes.
3 Beat fudge with a spoon until it loses its gloss. Pour quickly into the buttered dish. Refrigerate 30 minutes, until firm.
I will try it-If you guys try it first and itw worsk let me know!!
GOOD LUCK!!!

i have a fugde recipe that is made with splenda. the amounts are my own. so if you can improve on it great.
1/4 c butter/ use the best you can get.
4 bars no sugar baking choc, pinch of salt
put this into a non stick pan, you will need to make it low boil for 2 min and stir a lot. not a whole can of evporated milk, just pour like 1/4 c to start. stir. you decide how thick you want the fudge, and if you do add to much have strawberrys ready for dipping. so good that way.
so you've started to add the milk. after the first addtion keep stiring,
and at first it will look loose, but as the milk heats it gets thick, so keep adding like a 1/4 or less at a time, each time letting the milk get heated and the fudge smoother. so your done when your happy with what you have, take the pot off the stove, let it cool so that when you add the
vanilla and splenda you wont burn your mouth. now its cool and youve added the vanilla, ( i add the splenda by pouring from the box no measurment) add about 1/2c of splenda and taste, keep doing this till you get the taste you want, it's important that youve let it cool the taste is differnt hot to cold. pour into a bowl i add raisens, walnuts ect.
