In the Atkins book it says to eat bacon that does not contain nitrates. Well I've looked at every store and on every package of bacon and one of the ingredients is alway sodium nitrate. What does nitrate do? And where can you find bacon without nitrates? I have still been eating it, so who knows?
Does anybody know anything about this?
Thanks

Hi Graceful,
There may be some info in this former thread (http://forum.lowcarber.org/showthread.php?s=&threadid=62127&highlight=nitrates) that will help you. :)

Thanks Rosebud,
It answered a few questions for me, still a little confusing. Seeing how I can't find nitrate free bacon any where around where I live.

Hey Graceful. How's it going? To the best of my knowledge (limited at best) nitrate-free meats (bacon, ham etc) are most often found in organic groceries. Small, artisinal organic butchers and places like Whole Foods are most likely to have additive-free meats. Failing that, you might want to try mail order. Be prepared though. As with everything else when they take something out they charge you more for it. But, if you really want to go additive-free it might be worth it. You won't find them in regular grocery stores. Inconvenient, but true. Hope you have a great weekend. Take it easy. Good luck in your search.

Thanks for the info. I guess I will stick with the bacon with nitrates for now. Hasn't seemed to have made a difference so far. It's too expensive now, so I can imagine what it would be at an organic store.
