Hi all
Here's an asian recipe I've adapted from use with fish to
pork. Made it last night and it was heavenly.
Ingredients: Pork chops 4 tablespoons Sunflower oil 2
zucchinis (sliced into 1" long 1/4" thick matchsticks)
1/2 medium onion (finely chopped) 2 Cloves garlic (finely
chopped) 1 teaspoon mustard seeds 1 teaspoon fennel seeds 1
1/4 tsp Salt 1 cup chopped tomatoes
2/2 tsp Cayenne pepper 2 tsp Ground cumin seeds
3/4 tsp Turmeric
4/2 tsp Garam masala
Method: Preheat the oven to 350/180
Mix 1/4 tsp of cayenne pepper, 1/4 tsp turmeric and 1/4 tsp
salt. Rub this mixture over both sides of the pork steaks and
set aside for 30 minutes.
Heat 2 tablespoons of oil in a saucepan over a medium heat
and when hot, put in the mustard and fennel seeds. As soonas
the mustard seeds pop (almost immediately), add the onion
and garlic.
Stir and fry until the onion starts to brown slightly. Now add
the cumin, 1 tsp salt and 1/4 tsp cayenne. Stir into the
mixture and add the chopped tomatoes.
Bring to a boil, cover andf then simmer gently for 15 minutes.
Put a further 2 tbsp oil in a large frying pan and heat over a
medium/high flame. When hot, put in the pork steaks and fry on
both sides (approx 3 or 4 minutes per side).
Put the steaks in a baking dish. Fry the zucchini in the
remaining oil in the pan for 5 minutes.
Add the fried zucchini to the baking dish and pour the spicy
tomato sauce over it.
Place in the oven (uncovered) and cook for 20 minutes.
