Hi Folks,
We were talking last night and have decided that we are
addicted to this newsgroup. We are sure we could not be
successful LC'ers without all the information and great ideas
we see here. So thanks to all who contribute.
Prior to beginning this WOE one of our favourite meals was
tossing a rack of ribs and a whole bottle of b-b-q sauce in
the slow-cooker. (Don't even want to think what the carb count
would have been on that....yikes!). We are missing our ribs
and are hoping someone out there may have a recipe or at least
an idea for us.
We do have the recipe for the LC b-b-q sauce but the per Tbsp.
carb count is way too high for the amount of sauce this would
require. Does anyone have any suggestions regarding what we
could toss into the slow-cooker with the ribs that would be
flavourful, tasty and LC?
We'd appreciate any suggestions.

How about making up a LC rub and baking them?
That's what I did for the 4th. You can even add a little
Splenda if you like some sweetness. --Bill

Did you eat all the barbecue sauce? It might not be as bad as
you think.
I have a recipe that is 18 grams carb for the whole recipe of
sauce. You'd have to eat it like soup to get the whole 18
grams of carb.

Yummy BBQ Sauce - from Luckymom/Cindy
1 cup diet Coke 4 tablespoons tomato paste 1 tablespoon
dehydrated onion flakes 1 teaspoon Worcestershire sauce 1
teaspoon lemon juice 1 teaspoon salt 1 teaspoon minced garlic
clove Dash cayenne pepper
Combine all ingredients in a small pan. Bring to a boil,
reduce heat and simmer for 5 minutes. Delicious on just about
everything! The diet Coke gives it a nice sweet flavor but if
you like a sweeter sauce you can add a little bit of Splenda.
75.9 cal
76.6 g. carb
77.3 g. fiber .6 g fat 3 g protein
Most of the carb comes from the tomato paste (3 grams per
tablespoon) so you could skimp on that a bit, probably.
Skipping the dried onion is another 3 grams of carb. But if
you skip too much you'll skip the flavor too. Maybe add some
scallions at the end along with more garlic.

Grab some of the various dry herb/spice mixtures from the
supermarket, any and all you can find, like:
Garlic & herbs Onion Flakes Onion salt Garlic powder PeriPeri
Chicken Rubs Tuscany Herb Cajun Mix +++
Lay the ribs out flat and cut to a size to fit the crock.
Sprinkle one side of ribs with about half of your spices.
Place one layer in with the spiced side down and then sprinkle
the other half of what you have onto the backs of those ribs
A couple of shakes of sesame oil and Worchester sauce.
Then repeat with another layer of ribs until finished. No need
to rub in or leave to marinate. Shove the machine onto Auto
and do for about 4-5 hours.
They make their own liquid and come out and fall off the bone

Even though I haven't tried it with slow-cooker ribs, I
think you could use your recipe, and substitute the BBQ
sauce posted by "yepp" on this newsgroup on 6/24/03. If you
missed the post, do a goggle search for "low carb barbecue
sauce" by yepp.
I have tried this sauce recipe and it is fantastic.

No, we never ate the sauce,so you are likely right, probably
not as bad as I originally envisioned, but not great. It made
the ribs fall off the bone and gave a wonderful flavour. This
recipe looks great. May definitely give it a shot. Just
concerned about the aspartame in the diet coke. I haven't had
any at all since starting LC'ing but I am fairly sure from
other diets that it does slow me down. But what little I would
actually consume from the sauce shouldn't be a problem.
