Can some tell me why we cant have sodium nitrate in ham and bacon and hot dogs?

You may choose to have it. It's a personal choice. Dr. Atkins reccommends against it because nitrates are a known carcinogen. Most people don't feel bad about having nitrates once in a while.

Probably once in a while won't hurt.
Dr. Atkins was more concerned about having a lot on a regular basis.

Thanx alot. So does this mean I can have a hot dog once in a while. Or some ham!! What about salami? I dont know if your pros but you know more than I do. So I appreciate your info. :D

Nitrates are used as a preservative in foods. Especially meats. The GOV has this funny notion that if it doesn't kill you immediately, it's OK. LOL! Like anything... if you injest too much, it's probably not going to help you. Everything in moderation. You can buy meats from a whole foods market that contain NO nitrates or preservatives (that are harmful) for a few bucks more. I picked up about 1.5lbs of thick,yummy bacon there for $8. It tasted good and you could actually chew it.. like ham! :) The other cheapo store brand stuff you find elsewhere was tastier because of all the junk they put in it, but just not the same. It's like eating a steak or a cheap burger.. lol.
