Today I attended the Texas Restaurant Associataion show
in Dallas.
It was a interesting show, displaying many things, most of
which I was not even tempted to try. But my companion
stopped at a booth, that I had summarily dismissed as a
no-no (Ice Cream). He called me back to look at the place,
and there is now a company making low-carb Ice Cream.
The Particulars
Goldenbrook Farms LeCarb Frozen Dessert
Ingredients:
Water, Milk Fat and Nonfat Mik, Glycerine, Whey Protein
Concentrate, Egg Whites, Arificial Flavor, Guaar Gum, Mono
and Diglycerides, Bean Gum, Locust Bean Gum, Polysorbate
80, Pectin, Sucralose(Splenda Brand), Artificial Color
Nutrient Facts:
Serving Size 1/2 Cup (63 g) Per Serving Calories: 100 from
fat 60 Total Fat 7g Saturated Fat 4.5 g Cholesterol 25mg
Sodium 30 mg Total Carbohydrate 6g Dietary Fiber 0g Sugars
3g Glycerine 3g Protein 3g
[And remember the glycerine doesn't digest :-)]
And It tasted wonderful. Lots of flavors available..

If you live on the outskirts of DFW or within driving
distance, Brookshire's carries a full line of LeCarb ice
creams. I believe Brookshire's owns the manufacturing plant
for LeCarb. They have also just come out with a low-carb milk
(dairy drink). But, it may be on a limited run in
Brookshire's grocery stores and maybe some Walmart's in East
Texas may carry
it. I haven't looked for it because I don't care for milk
that much.

Glycerine does digest for some people and in large quantities
can send their blood sugars up surprisingly high.

this in detail. But six grams of any carb even if it was pure
glucose won't hurt you.
What will is the calories if you eat bowl after bowl every
night. I had my blood sugar and weight under very good control
until I got into ice cream last fall. I was using Precose so
my blood sugar was absolutely normal, but no one eats the
amount in "one serving" of ice cream, and an additional 300+
calories a day can turn into a couple pounds very easily.

I've yet to find any lowcarb icecream that I like. I prefer to
stick with the real thing and adjust my portions. Last week I
bought some Godiva Belgian Chocolate Ice Cream which is
usually hideously expensive, but it was on sale and I had a
coupon. I stuck in in the back of the freezer and I haven't
had any yet...maybe tonight. This pint will probably last a
month or two. I'd rather have less of what I really like.
That said, I do want to try this LeCarb Ice Cream at Walmart,
but we don't have a Supercenter nearby. Our regular Walmart
doesn't sell it. And I haven't seen it anywhere else.

Dear Jenny,
I have been occasionally enjoying a small cup of Blue Bunny,
no-sugar-added ice cream once in a while with no ill effects.
Mind you this is a small amount, and not regular ice cream
with sugar. The other day I cooked some blueberries with
splenda and topped it with that. It was awesome. The only
reason I cooked the berries is cause I had a lot of them and
didn't want them to go bad.

wow, Jenny...... you can't stop at a 1/2 cup serving??? i get
brain freeze if i eat more than 1/2 cup at a time
guess you have the same problem with ice cream that i do with
french fries...... NO don't let me near them!

Oy...Godiva is sinfully delicious. LOL! I'm glad you have such
willpower. I know I can NOT buy it or I would probably eat it
all in one sitting. LOL! I love the chocolate cheesecake ice
cream they have...I ate it all the time before I was
diagnosed. <sniff> I miss it now. :-D

I love LeCarb chocolate! I don't know if it's because I hadn't
had ice cream in such a long time, but it tastes just like
chocolate ice cream to me. :-) Here's their website:

I do, almost every night. Though I do sometimes notice
"serving size drift" and have to correct myself! The bowl I
use makes it easy to stay fairly close to 1/2 cup. Favorite
flavor: Giant brand mint chocolate chip.
I also eat Dove miniature ice cream bars. A nice small easy
snack in the wee-hour-growlies! bj

Jenny,
I have found a way for me to eat my no-sugar added ice cream
without doing harm. If I have a good 2 hr pp, say under 100, I
let myself have a custard cup of Edy's ice cream as a treat.
Is this cup packed to the to is 6 oz and I don't pack it to
the top, it is about the 1/2 cup serving on the package. Much
better than trying to take a small portion in a big bowl. I
also use a old baby spoon for feeding really young infants to
et this treat. It makes it last a bit longer.

Next time spread them one berry thick on a cookie sheet and
freeze them. Put them in a Ziplock bag and keep in the
deep-freeze. They'll keep for months (I've kept them for up to
a year) and still taste fresh when you defrost them. Much
better than cooking them IMHO.
We are fortunate in that we live surrounded by the prime
blueberry (and strawberry!) fields here in NJ and we always
used to buy and freeze somewhere between 20 and 30 pounds a
year, as well as another 20 pounds or so that were distributed
among ourselves and the Grandmas and consumed fresh.
That's going to be _way_ down this year as there's no more
blueberry pancakes in the future for me (or at least nowhere
near as many) as well as no more homemade blueberry preserves.
(Our Olympics bound daughter has always said that the secret
to her success was to carbo-load on my whole wheat blueberry
pancakes!) ;-)
When the kids were young it was always a favorite family
outing to go pick our own blueberries and strawberries. They
were productive based on their age, but they all enjoyed it
(and thank God the farms didn't weigh the _kids_ coming and
going!). ;-)

I won't have ANY type of ice cream in the house. If it's here
I would eat it and eat it and eat it until it was gone. It's
one of those foods I love and have absolutely no control with.
I will have some when at a birthday party. I can't eat myself
blind in that situation so I have just a small amount and then
walk away from the table. c

Evelyn,
I wish I lived in a part of the country where you could buy
the Blue Bunny stuff. I keep hearing very good things about
it, but all they have here in
W. Mass is freezers full of the Low Fat/Non Fat ice cream that
has even more carbs than the regular stuff. <sigh>
We are always the very last to get any product on the market
here. But it's probably a good thing because ice cream is the
one food I have absolutely no power to control. If they had a
12 step program for Ice Cream, I'd be going every week. My
sweetie very kindly buys only the flavors I find revolting
(banana and strawberry). Otherwise very bad things would
happen. <g>

I ate those Dove bites when I was pregnant. They worked well
for my non-stress tests. Normal procedure is to eat a candy
bar or drink fruit juice just prior. Something about the
sugar makes the baby wake up and move around more. Having GD,
I didn't want to do this. But my normal lunch of a cheese or
peanut butter sandwich and raw veggies while lying on the
table just didn't do a thing to wake her up. To this day,
those are her favorite foods though. *L* I found that one
Dove bite was enough to get her doing what she was supposed
to without raising my BG too high. And the chocolate coating
made it seem like I wasn't eating ice cream (which I don't
much like).
I have all kinds of bowls in assorted sizes. I have measured
them so I know exactly how much each one holds. Makes it
easy to portion things out without having to measure them
each time.

I must be weird. Ice cream is one food I really don't like. If
I do eat any, it is usually some kind with chocolate chunks in
it. I'll dig around the ice cream and pick out the chocolate
chunks with my spoon. Or, if it's a really hot day, I might
have a tiny taste just because it's cold. But I really don't
care for the stuff.

Check out my utterly low carb pancake recipe on the recipe
page of my web site (link below my sig.) You make it with
protein powder and it has very few carbs.
My sweetie who isn't diabetic thinks they are better than
"real" pancakes. You can put berries on them, use some Maple
Grove Farms sugar free syrup and enjoy a completely blood
sugar-friendly breakfast.

Great Idea James, but my husband got it into his head that he
wanted the hot sweet syrupy feel of the cooked this time
around. It wasn't a huge amount but it was really good.
I remember going blueberry picking with my children when they
were young. I told them for every one they ate they had to put
one into the plastic bags I gave them. That way we had enough
for a good batch of blueberry pancakes the next day. Blueberry
pancakes with real maple syrup....... Well that's a thing of
the past, but the memories sure don't raise my bg's :-)

We also have Edy's and Breyers and Perrys no sugar added
around here, besides the Blue Bunny and Le Carb from Wal Mart.
So there is actually a choice! Keep on looking maybe it will
pop up at your local grocery sometime!

You can have your bluberry jame and eat it. Ball and some
other companies make a low methoxyl(sp?) pectin tht thickens
without sugar. I make the jame following the instructions in
the box and do not put the sweetener in at tht time. when I
open the jar (I use 8oz jars) I add about 5 packets of
nutrasweet, iTbs of water and stir. It makes a very nicely
fruit flavored jam. Just be sure to both refrigerate it after
opening and to et it up in a week or so as it contains no
preservatives(including sugar) so will mold up pretty soon.

sanely. I am not one of their number. I eat an occasional very
expensive cone out at a farm stand, but portion creep always
does me in. The same is true of Popcorn. I'll start out with
the tiny measured serving, but the next day it's a teeny bit
bigger and so it goes until it's time to go back to 30 gms a
day and NO TREATS. <g>
OTOH, unlike a lot of my friends, I can live with a cupboard
full of cookies and never hear them calling my name.

Cheese and nuts are what I can't have around. I keep blue
cheese and feta for my husband as they don't tempt me to
overindulge and I keep soy nuts which satisfy me in small
amounts and don't seem to get me running back to the kitchen
for more and more like a bag of peanuts does. My husband loves
nuts and seeds but always gets them in shells to keep him
busy. those are less tempting to lazy me.

you could cook it right in with the fruit. It isn't affected
by temperature like Nutra sweet is. And it tastes better too!

I do use Splenda for some things, but I don't know how long I
may keep the jam (sometimes over a year), so I prefer to have
no sweetener in until I am going to use it. Splenda is fine,
but Idon't find it that superior to some of the other
sweeteners regarding tste and the splenda is so light that I
find it tends to blow around if there is any breeze at all.
Just a matter of personal preference.

Getting a Wal-Mart won't help. They're only in Wal-Mart super
stores which don't seem to exist in the Northeast at all.
We have a local Wal-Mart but it only sells junk food. The
ambiance is, well, let's just say it has me nostalgic for
K-Mart which was so much more upscale. <sigh>

I can eat cheese in reasonable quantities, which is a good
thing. I've found that soft cheeses like brie seem to have
some kind of near-magical effect on my weight loss. If I eat a
couple ounces a day I lose weight a lot better than if I
don't. This is contrary to many people's experiences, but I do
weigh portions and log what I eat to keep my calories where
they need to be.
Nuts are another story. They are much too easy to nibble! I
eat sunflower seeds in the shell which take a lot of energy to
eat and limit the amount I keep in the house.

Yup, gritty white conter and not very sweet eggwhites:-) My
experience exactly! If heat is the problem, try one of the
ascufame sweeteners like "Sweet-One" which cna be hard to
find, but works well in the tste and taking het deartment.
DiabetSweet is also asculfame, but is quite pricey.
