This may look like alot of carbs, but it makes 4-8 servings with lots of fiber. Perfect for induction. 1/4 of the recipe have 11 carbs with 3g fiber for 8 net carbs.

1/4 cup olive oil
1 oz ginger root (chopped)
2 cloves garlic
3 stalks celery
1 Tbsp soy sauce
4 cups grated cauliflower (about 1/2 head)
8 oz pork loin chop center cut diced
1 oz green onion chopped
1/2 sweet red bell peper sliced thin
3 oz small broccoli flourets

Warm olive oil in skillette. Throw in ginger, garlic, celery and soy sauce. Cook until celery is softened. Add pork and continue to cook until pork is cooked all way through. Remove pork mixture from stove and set aside.

Spread cauliflower in pan. More oil may have to be added. Cook stiring occasionaly until cauliflower is slightly browned. Stir in pork mixture. Cook for about 2 minutes to combine. Add red bell pepper and broccoli flourets. Cook for only a minute more so pepper and brocoli remain crisp.

Remove form heat and serve.

I have made this and I always add an egg and scramble it into the mixture. There is always egg in the restaurant fried rice. Yummy...
