So, I've read Atkins (New Diet Revolution and Vita-Nutrients) as well as Protein Power. Any suggestions for more good reads on the LCing topic?

I recommend The Secret To Low-Carb Success - How to Get the Most Out of Your Low Carb Diet -- it's by Laura Richard. She gives a brief overview of low-carb plans and provides suggestions, tells you what to expect and answers some questions that come up frequently. The source for much of her information, interestingly enough, is message boads like this one. I got mine for $7 bucks at Waldenbooks. It has some interesting information and might help you decide which book to read after you're done with it!
