Hi! I did this alittle different then the posted one and it came out terrific. Not dry at all. Here is what I did;
Fried 5 slices of cut up bacon is a deep fry pan.
Then add chopmeat - I probably had about 2lb.
Let it brown in the bacon fat and then
Add about 1/2 cup of heavy cream.
Then I added about 4oz. of cheddar, mozzerella, and provolone.
Because of the cream I didn't need the egg and it had a great cheese sauce. My whole family loved it! And I did it all in one pot ontop of the stove.
Try it and let me know it you like it!!
Have a great Lcing day!

This looks really good!! I think I'll try it out tomorrow night! :)
Do you drain the meat before you add the other stuff?

Hi Joe Joe!
No I didn't! It made for a creamier sauce. If it seems to greesey you could drain it. I guess that would be your call. I liked it!!!
Let me know how you like it!!
Have a Great LCing Day!

Thanks Kathy! Did you cook it in the oven or just all in the frying pan?

Yum!! This was really tasty!! Probably has about a bajillion calories in it, but that's exactly what I needed tonight. I had another long day at school, so I was low on energy when I got home. This was perfect! :) And I've got leftovers for tomorrow too!
Thanks for the recipe!

Your Welcome Joe Joe I'm glad you enjoyed it!! That's the best part of the Atkins diet we can eat the bijillion calories as long as the carbs are low. And I don't know about you but no-fat items have no flavor but as Emril (a cook on Foodtv) says Fat Rules!!!
Have a great LCing Day!

Thanks so much for sharing this recipe! I can't wait to try it! My son has an egg allergy ( so of course he can't eat anything made with eggs!) This will be a great one for the whole family! :)

Emiril Legassi says Fat Rules??? Really? I thought all he said was BAM! That guy really bugs me! :) Why does he say Fat Rules?
I love watching Iron Chef, that's one of my favourite shows! I also used to love Two Fat Ladies in the Kitchen.

Doesn't the Hedgehog (Emeril) actually say "PORK fat rules"?
kathjef
Fri, Jun-06-03, 12:03
Yes Tut he does, but he also says, "All Fat Rules." Why did you call him hedgehog!

I'm fairly new to low carbing, and I have been printing out recipes at work. We have a central printer and the girls here have been copying the recipes I print. EVERYONE of them wanted this recipe and several have tried it. They all say its great. I'm going to fix it over the weekend.

Forgive my stupidity...what is chopmeat?? Is it like the beef I would use in a stew??

Well, kathjef, I call him the Hedgehog because that's what Chef Anthony Bourdain of foodtv's Cook's Tour calls him in his various books.
I think Emeril hates him. He was making some remarks in this one episode of Emeril Live where he pretended to steal food items from other show's supplies.
Also, he looks like a hedgehog. ;)

Hysteria, chopped meat is ground beef. It can be any of the variations on this--ground sirloin, ground round, ground beef, etc.
Enjoy!

i did that same recipe (before i saw it here) twice. . .once because my family was having slopy joes sandwiches. . .so I took some cooked gbeef out before sauce and cooked up half a dark green pepper(semi hot pepper. . nice smokey flavor) chared the skin to give it an even better flavor and a nice slice of onion. . .cooked until the veggies were done and then threw a couple of slices of deli american and let it melt. OH MAN. . .so the next day for lunch there was 4 slices of Roast beef. . .same treatment. . .what a treat! redawn:)

Just an FYI I tried making this with turkey bacon and I don't recommend doing it that way. Stick with the nice yummy regular pork bacon and it is delish. The turkey bacon did not give it any flavor. I love this recepie. So easy and good.

are you sure that you're not supposed to drain off the grease? i tried making this dish the recomended way and all I ended up with was a big greasy pot of bland tasting cheese and meats. maybe i didn't something wrong but i'm not sure. i cooked the bacon, then cooked the hamburger meat, then added the cream and cheese like the thing called for. i'm just wondering if its suposed to be a big greasy mess that people like or i maybe didn't do something properly. this just seems like this is too good of a dish to mess up so if anyone can help me out i would apreciate it. peace out.

you maybe used ground beef with too high of fat content. If you have the bacon grease in there, I would try it with a 90/10 or 92/8 lean ground beef. Just a thought, I hope it helps

thanks, i found another recipe that's really good:
LB ground beef
1/2 c mayonnaise
1/2 c cream
2 eggs
3/4 c cheddar cheese, grated
3/4 c Swiss cheese, grated
3/4 c sliced green onions
Salt and pepper to taste
Brown meat, drain and set aside. Blend mayo, cream, and eggs until smooth
(may add T or so of soy flour for texture). Stir in meat, cheese, onions,
salt and pepper. Pour casserole dish and bake in 350 degree oven
for 30 to 35 minutes.
now THIS stuff is really good. especially with some crumbled fried bacon thrown on top.peace out.

This is an excellent recipe! I could not stand looking at all the fat in the pan, so I drained it and also added one can of mushrooms. Yummy! :yay:
Thanks for the great recipe........ I'll make this one over and over..

i dunno... this was just a little too heavy & rich for me. while i liked the flavour, i couldn't eat more than about 1/4 cup at a time. i'll try a little less cream and add some portabellas & peppers.
