I normally just make up dinner from what happens to be in the fridge and pantry. Here is what I had last night.

3 boneless, skinless chicken breasts (mine were straight from the freezer)
onion powder
1 tbsp minced garlic
frozen veggies
1 small can mushrooms
1/2 cup tomato juice

Heat oven to 400
Spray baking dish w/pam, or rub butter on it; pour on tomato juice; place the chicken in it sprinkling with onion powder and garlic; dump frozen veggies on; drain mushrooms and place on top; Cover with aluminum foil or a tight fitting lid if you have one and bake for about 1 to 1 1/2 hours.

It is a whole meal in one dish and doesn't require standing over it, watching it all evening. This fed 4 people, all adults, although I did make some carby sides for the others.

I don't know what the carb counts are, but I tried to make sure each item was low carb. :)
