These are the best ones yet! I fried up some hamburger, added some taco spices (was out of cumin so just some garlic pwdr and chili pwdr). I spooned into muffin tins and then added a few shreds of cheddar and a teeny slice of purple onion. Then add some beaten eggs (which I dilute with some water) and bake.
SO GOOD!! We had them again today with some sour cream. Yummy!

Did you put the egg on top of the meat???:confused:
Or did you mix in the meat ?

I spooned the mexi-buger into the muffin tins and then poured the beaten egg/water mixture over top...then baked. So yummy:D

oh wow these sound yummy and convenient to travel with!!!!!!...what is the oven temp...about how long did you bake???????...i want to try these to take to work with me...got some 14 hour days ahead of me for a 2 week stretch...would like to make these for the monotony!!!!!!!!!

I would do the standard 350 degrees and I'm guessing start checking it at 10 - 15 minutes. Take them out when just done. They do sound yummy.
