After sampling this at dinner at my place, Ruth suggested that I post my recipe here. It's pretty delicious. I actually like it better than Weiner Schnitzel.
Quantities to Suit Yourself
Turkey thigh cutlets
Spicy Hot flavoured Pork Rinds
Egg
I buy the cutlets already tenderized, but you could do it yourself. Crush the pork rinds in a bag with a rolling pin. Get them fairly fine. Beat the egg well, adding 1 Tbsp. of water/egg. Dip the cutlets in the egg, and then in the pork rinds. Saute, covered at medium heat in 1-2 Tbsp Olive Oil, turning once.
It's also very good the next day, cold, so I usually make at least 2X what I plan to eat.
