Is it ok to use unsweetened canned coconut milk as a fat to cook in? The Carb Counter in DANDR says it only has 0.5 g carbs (better than heavy cream!) per 2 tbsp. I've always heard evil things about coconut milk, but curry is yummy. :confused:

Yes, it's ok. Karen even has a chicken curry/coconut milk recipe in the Recipe section on the orange bar. It's pretty mild, tho.

Yumyum. If you don't want it mild, use Thai green curry paste, go to the Asian food store and get the imported kind! 1 g carbs per tablespoon and you won't need a tablespoon!
