a friend gave me this recipe she has been doing atkins for over 3 months now and i just wanted to share it with you. its really yummie.

1 1/2 pound of ground beef
1 egg
1/2 cup of parmesan cheese grated
1 cup of sliced mushrooms
1 tbsp 1% or 2% milk
salt and pepper to taste

mix all ingredients very well
bake in a loaf pan at 350 degrees for one hour

My husband, who makes killer meatloaf, will tell you that it would be even better if you use about 2/3 of a lb of ground beef and then equal parts of ground pork and ground veal.

He has been talking about making a meat loaf - we haven't had it since before Atkins!

I was wondering what I could use insted of bread crumbs... Quick question my family are not huge mushroom fans. Any sub ideas?

You don't have to use anything. If your recipe contains a lot of liquid like tomato sauce, reduce the amount my 2/3 and add an extra egg. Mixing it vigorously will also help it to hang together.

I made a meatloaf with the Keto Crumbs. I used 1/4 cup of the crumbs, 1lb hamburger, 1/2 lb ground pork, and 1/2 lb of ground lamb and one egg.

It was great and the Keto Crumbs add about 5 carbs to the whole meatloaf.

I'd like to know how you can eat this meatloaf without creamed corn and baked potatoes?! Comfort food!!! Look closely at some of your comfort foods and you will see one of the reasons why we are all gathered here! LOL

I will be trying this soon- I just don't know what to serve with it??!! And what do you do with the leftovers if you can't have a sandwich with white bread?! (comfort foods again)

You know I love bread so much but it can never taste good enough to make me give up on how much better I feel. Eventually I hope to have my bagel in the morning again but for now, I am fine eating my sandwiches on a plate. :)

:idea: I just saw a recipe using 2 zuccini cut up instead of mushrooms. I think I will use a little of both in mine tonight.

Anyhoo, they had this meatloaf recipe, I haven't tried it yet...

Southern Border Meatloaf

1lb extra lean ground beef (of course, we'll use full fat :D )
½ cup finely chopped yellow onion
¼ cup chopped cilantro leaves
1 can (4 ounces) chopped mild green chilies
2 egg whites
½ cup cornmeal :eek: (nutrients says only 3gr carb per serving)
1½ teaspoons ground cumin
¼ teaspoon salt
¼ teaspoon black pepper
1 can (8 ounces) tomato sauce, divided
2 tablespoons ketchup (I'll be using Walden's Sugar Free)
cooking spray
1. Preheat oven 350°F. Combine beef, onion, cilantro, chilies, egg whites, cornmeal, cumin, salt, pepper and half of tomato sauce in mixing bowl; mix well. Combine remaining tomato sauce and ketchup in a small bowl.
2. Place meat mixture on a rimmed baking sheet coated with cooking spray and shape into an oval about 6x9 inches. Top with tomato sauce mixture. Bake 55 minutes.
3. Let stand 5 minutes before slicing.
Makes 4 servings (2 slices per serving)

Can I have meatloaf on induction? My wife had thought about putting some Tomatoe paste on top of the meatloaf also. Is that allowed?

heres a meatloaf reciepe you can have....

1 1/2 pounds ground beef

1 cup of slice mushrooms
1 tbsp milk
salt and pepper to taste

mix all ingredients very well
bake in loaf pan at 350 for one hour

this is very delicious !!!! i guarentee it.

Instead of tomato paste you can use Salsa. It's lower carb than the paste and it's really good. I always put it in my meatloaf.

I make 'the chef's favourite meatloaf' from the www.carb-lite.au.com site.....it's great.
I also sub the ground beef/pork with ground chicken/veal, add some chicken spices and it's even better.

I made this last night. It was the best meatloaf I've ever had. I put heavy cream in for the milk and topped it with atkins barbecue sauce. Its very hearty and heavy so I felt stuffed on a small serving. For me it will make about 10 servings. I will be making this all the time- its easier to make than a hamburger and it tastes better.

I plugged the numbers into fitday

For the whole meatloaf: 6 net carbs

When I added the atkins BBQ sauce per serving for 10 servings:
201 calories, 67% fat, 1.1 carbs

Here's one we make pretty regularly. I think next time i'll try it with some added ground pork tho, that would be yummy! For variety at times, i'll add a bit of chopped onion, mushrooms or any veggie that calls me at the time. Always works great!!

Mozzarella Meatloaf

3 eggs, slightly beaten
1/2 cup spicy V-8 juice or tomato sauce (i buy the lowest carb i can find)
1/2 tsp. ground oregano
1/2 tsp. salt
1/4 tsp. freshly cracked pepper
1/2 tsp. garlic salt
2 pounds lean ground beef
8 oz. thinly sliced mozzarella cheese, diced (save 2 slices for the topping)
2 tbsp tomato sauce or low carb ketchup
3 tbsp. Parmesan cheese, divided

Preheat oven to 350 degrees. Combine all ingredients except cheeses and 2 tbsp tomato sauce. Divide meat mixture in half. Shape half of the meat into a flattened oval in the bottom of a 9 x 13 inch glass dish. Top with diced cheese; spread to within 1 inch of the edge. Sprinkle with 2 tbsp. of Parmesan cheese. Top with remaining meat mixture; seal edge by pressing together. Spread top of meat with tomato sauce/ketchup; sprinkle lightly with additional garlic salt, pepper, and salt. Bake 1 hour. Top with sliced cheese, sprinkle with remaining Parmesan cheese, and return to oven until cheese melts. Allow to sit 5 - 10 minutes before slicing.
