They made the most gorgeous low-carb salad that works as a full meal. Salad with fresh tuna
First, whip up a vinaigrette: mix fresh minced garlic with a dollop of dijon mustard, add half a tsp of salt, black pepper, red wine vinegar (to taste) and then whisk in olive oil (to taste, some like more oil or more vinegar)
Make a nice mesclun salad with tomatoes, mushrooms, a boiled egg. Dress with the vinaigrette only when ready to eat.
Take the fresh tuna steak and slice fairly thing (1/3 of an inch wide, two or three inches long). Sautee these in your vinaigrette, only about two minutes on each side. When they are slightly cool, place them on your salad plate - yum! I'm making this tonight, and am going to a sushi market to buy good tuna...
