1 lb ground beef
1 lb mild pork sausage
1 c crushed plain pork rinds
1 can (4.5oz) diced green chilies
1 medium onion, finely chopped
8oz Monterey Jack cheese - shredded
3/4 c salsa (mild, medium, or hot, as desired)
1 egg
2 or 3 cloves garlic, crushed
2 tsp dried oregano
2 tsp ground cumin
1 tsp salt

Preheat oven to 350

Combine all these ingredients in a big bowl, and then, with clean hands, knead it all until it's thoroughly blended.

Dump it out on a clean broiler rack, and form into a loaf - it will be a large loaf - about 3 inches thick. Bake for 90 minutes

Not sure where I found this....sounded good so thought I would post it here.

I don't know how I missed this one, but it sounds great! Looking forward to trying it.

I've never met a meatloaf I didn't like! OK, there may have been one or two failed attempts... ;)

I don't have an oven, but your recipe sounded so good so I decided to make mexican hamburgers instead, I used half the pork rines and mixed half the cheese into the meat and the rest on top, it was great! :thup: Thanks so much for sharing.
I had this instead of tacos :D
